Ingredients:
1 onion, chopped
1 carrot, grated
1 garlic clove, crushed
1 tbsp olive oil
1 x 400g Mayor Passata
200ml vegetable stock
2 tbsp double cream
A handful basil, chopped
1 celery stick, chopped
Method:
Cook the onion, carrot, celery and crushed garlic in the olive oil, until softened. Add the can of MAYOR PASSATA and vegetable stock. Simmer for 15 minutes. Whizz in a blender. Stir in the double cream and a handful chopped basil.
Chef’s Tips – Variations
This is a quick and easy soup, but you could try adding smoky bacon before blitzing to make the sup nice and rich.
Alternatively, add a dish of Mayor BBQ sauce to enhance the flavor or use Mayor Zalza Pronta, instead of Mayor Passata and change the cream for low fat fresh cream.
